6 sample hot and cold holding questions and answers
6 of our 25 questions, with the answer and why.
1. A cold display holds ordinary TCS potato salad under temperature control, with no time-only procedure. Which product reading meets the cold-holding limit?
Answer: 40°F (4°C)
- A) 45°F (7°C)
- B) 50°F (10°C)
- C) 55°F (13°C)
- D) 40°F (4°C) (correct answer)
Why: Ordinary cold-held TCS food must be at 41°F (5°C) or below. The 45°F (7°C) raw-egg ambient allowance does not apply to potato salad.

2. A refrigerated ready-to-eat TCS dish is prepared on Monday and kept at 41°F (5°C) or below under ordinary date marking. Which day is the latest permitted consumption or discard day?
Answer: Sunday of that week
- A) Monday of the following week
- B) Tuesday of the following week
- C) Wednesday of the following week
- D) Sunday of that week (correct answer)
Why: Monday is Day 1, making Sunday Day 7. Waiting until the following Monday would count eight days.

3. A prepared ready-to-eat TCS item leaves cold holding at 1 p.m. under an established four-hour time-only procedure. By what time must it be served or discarded?
Answer: 5 p.m.
- A) 6 p.m.
- B) 7 p.m.
- C) 9 p.m.
- D) 5 p.m. (correct answer)
Why: The four-hour period starts when temperature control ends, so the deadline is 5 p.m. The longer six-hour procedure has different requirements and does not apply to this setup.

4. A batch of soup moves from 150°F (66°C) hot holding into a cooling process toward 38°F (3°C). Which band on the cooling log represents the FDA retail danger zone that the soup crosses?
Answer: Between 41°F (5°C) and 135°F (57°C)
- A) Between 41°F (5°C) and 135°F (57°C) (correct answer)
- B) Between 32°F (0°C) and 41°F (5°C) only
- C) Between 135°F (57°C) and 165°F (74°C) only
- D) Every temperature below 32°F (0°C)
Why: The FDA retail process discussion identifies the temperature danger zone between 41°F (5°C) and 135°F (57°C). The proposed 32°F (0°C) to 41°F (5°C) interval excludes the warmer temperatures in that danger zone.

5. When helping assess a large food-holding unit, which sampling approach checks whether it is working properly across its storage area?
Answer: Take temperatures of foods in various locations
- A) Use only the food nearest the cooling outlet as a reading for every shelf
- B) Use one acceptable food reading from the start of the day for every later load
- C) Take temperatures of foods in various locations (correct answer)
- D) Read only the thermostat display and omit product measurements
Why: The assessment guidance calls for food temperatures from various locations in large holding units. One location beside the cooling outlet does not check the unit's different locations.

6. A date-markable commercial RTE food is opened Wednesday and will be kept more than 24 hours. Its manufacturer sets Friday as a food-safety use-by date. What limit applies to the establishment's date mark?
Answer: It must not extend beyond that Friday safety deadline
- A) It may extend to the following Tuesday because opening day starts a fresh seven-day maximum
- B) It may start a new seven-day period on the manufacturer's Friday date
- C) It must not extend beyond that Friday safety deadline (correct answer)
- D) It can be omitted until Friday because the manufacturer supplied a date
Why: The establishment's mark may not exceed a manufacturer use-by date determined on food-safety grounds. The seven-day maximum does not authorize extending a safety-based manufacturer deadline.
